I'm mainly detailing sports cars as a hobby and somebody asked me approximately how much I'd charge for his Chevrolet Avalanche.

By experience, how much more time in % do you spend on such a big vehicle in comparison to a Mustang or Corvette?

Depends on if you are cleaning the cargo area. Plan on using a whole bottle of whatever trim dressing you choose (kidding of course). Those things have a TON of black textured plastic.

What services are you planning on performing? Just wash and wax? Or polishing too?

Full polish, the truck is black and he wants to make it look as good as the Mustangs/'Vettes that I polished:

    I'd add at least 25%. SUV's are a PITA.

I would even add more than that. I would add 40-50%. Those are big vehicles! GM clear is generally harder too, so you may have to work harder to refine the finish after having to step up your compound/pad combo.

EDIT: 25% seems more appropriate, depending on what your pricing schedule looks like. If you normally charge 750 for a 2 step correction, then his price would be just south of 950. That would make up for the extra work I would think.

And the more I think about it, there really isn't that much paint on there, because there is so much black plastic. It may not be a whole lot more polishing than a car.

i'd charge him by the hour and either give him an estimate on how many hours you think it'll take or just give him your hourly rate and flip him the bill when youre finished.

like what billy said i prefer to do an hourly rate so you dont have to give them a set price. It the truck is trashed it will be reflected in the time it takes to detail

the hardest part about suvs/vans and trucks is that they are tall and its is tough getting the roof for washing claying and polishing. a real pita

I would charge at least $25/h thats about what I charge. You've got to think what all goes into your price, such as product, time, effort, and future investments. Mine is about $10/h product, for my time and effort its another $10 and $5 for future investments (New Machinery, More Products, Pads).
